Paleo blueberry muffins

Without sugar and wheat: The blueberry muffins are still sweet, juicy and filling. Good To Go! Did you know that 1 handful blueberries has more fiber than 2 slices of whole wheat bread? And only a small proportion of fructose. The blueberries you shall therefore tuck in confidently - in our blueberry muffins are we most like.

Ingredients

2 ripe bananas
0.5 teaspoon ground vanilla
4 eggs
100g ground almonds
20 g of coconut flour
2 tsp cinnamon
0.5 tsp cream of tartar
50 g of melted coconut oil
100g blueberries (to taste)

Preparation

Preheat oven to 180 degrees.
Grease a muffin mold or molds up (our experience: in paper cases glue the muffins later unfortunately often fixed).
mix banana, vanilla and eggs with a hand mixer in a bowl.
The remaining ingredients (except the blueberries) gradually under mixing until a viscous paste is formed.
The blueberries gently mix in. spread batter into ramekins and for 30 - 35 minutes after the furnace.

Our tip

The muffins also work well with other fruits - e.g. apples or peaches. The batter recipe remains just the same.

If you do not know it, it is believed to have little Paleo muffins on. So Well-suited to help assure skeptics!
