Bread Myth - Why Not Crop We Doing Good?

A freshly baked bread is incredibly tempting. In the Paleo diet but all grain products are all taboo. Can something taste so good and still be bad for us?

The Paleo theory: We still do not eat long (enough) Cereal products, as that our genes it could adapt. Here all the facts on the subject:

Only with the beginning of agriculture, our Jäger & Sammler has changed diet dramatically. The first cereal products have only been 11,500 years, rice for 10,000 years, since about 9,000 years maize
Large spread in Western Europe have to include grain products only since about 7,000 years, according to the state of the teeth of our ancestors, wheat is however only since 1200 years a major component of our diet.

Grain is particularly rich in phytic acid, which inhibits the uptake of a whole range of important minerals. Scientists assume that this was the main reason for a decline in growth in stature of the people, after we have gone over to wheat-based diet.
Technically seen evolution 11,500 years as long as a blink of the eye. Our genes have not had time to adapt to this radical change in your diet.
In Germany, 91.6 kg grain products are consumed per year per person. Combined with a 35 kg of sugar, which takes every German to be in the year, a basic diet gives the not even removed reminded, as we have long nourished us thousands of years healthy.
Cereals lack of vitamins and minerals. We are mainly pasta and bread to us, we eat starchy carbohydrates that are just sugar for the body again. We thus displace nutrient-rich foods such as meat, fruits, nuts, vegetables and fish.
In the cereals outweigh omega-6 fatty acids, but consumed in large quantities can be harmful and promote inflammation. Worse, they also suppress the vital for us omega 3 fatty acids.
Many "lifestyle diseases" such as tooth decay, allergies, metabolic disorders, bone tenderness and even dementia can be traced back to the cereal and sugar-heavy diet today. Carbohydrate deficiency diseases, however there is not.
There is no "essential", so vital carbohydrates. Without fats and proteins but man can not live. Nevertheless, one day often begins with granola, lunch, there is a sandwich, afternoon cakes and evening pasta. This can not go well in the long run.
Cereal has developed its own defense strategy to protect themselves against predators: block lectins and gluten, the digestion and absorption of nutrients. Both are also instrumental in the development of auto-immune diseases. Since lectins and gluten are resistant to heat, they reach undisturbed in the small intestine and are not broken down like the rest of the food in the body. They grab the small intestine to downright and make it more permeable, which means that they can enter the bloodstream more directly. Here, our body begins now to fight back. An autoimmune response occurs because the immune system damages in this case also the body's own cells.
The whole thus reads pretty creepy. The classic "nutrition chart" with carbohydrates as a fundamental basis is a construct of the 50s and urgently needs to be overhauled. For still lives a large part of the population in mind, the body of bread to do something good. That reminds me of the smell of fresh bread in spite of this knowledge itself is still a pleasure, I will soon start a few alternatively baking experiments.
