Paleo Sweet Potato Biscuits

From our last sweet potato mash something cooked from the sweet potato was left and we had once again wants to biscuits. Juicy they should be and chocolatey. So on to the next baking experiment: sweet potato biscuits it should be. The result has convinced - we have all weggenascht at once ...

Sweet Potato Biscuits
Makes 8 // active: 15 minutes // Total: 30 minutes


100g sweet potato
50 g ground almonds
20 g coconut flour
1 egg
1 tablespoon honey
1 teaspoon cinnamon
1 teaspoon vanilla
20g dark chocolate (85%)


Preheat oven to 180 degrees.
Peel sweet potatoes and cook until tender. Let cool down.
Chop chocolate into small pieces.
In a food processor or with a fork mash the sweet potato and all the other ingredients to mix. At the end of the chocolate fold (if the sweet potato was not yet completely cooled, melt the chocolate chips).
Bake for 15 minutes in the oven.
