Paleo Chicken Piccata Harmony

Today we will see a dish that can be prepared in 10 minutes, easy and very tasty, oh yeah, cooking Paleo meals in no time and they are also tasty can. In fact, piccata tastes tangy due to capers and lemon, I added the lemon slices that intensify the flavor, make the dish more decorative and can be enjoyed along with the meat. A quick meal and suitable for everyone, ideal if unexpected guests arrive, characterized by a few ingredients found in any season.


Chicken piccata Harmony Paleo

Ingredients for 2 servings
400 grams of chicken breast cut into 4 slices
2 tablespoons salted capers
1 organic lemon sliced
juice of 1 lemon
3 tablespoons of plain water or beef broth
2 tablespoons arrowroot
2 tablespoons extra virgin organic olive oil
1 tablespoon of virgin coconut oil or 1 tablespoon ghee
Himalayan pink salt
2 teaspoons chopped parsley

Preparation 

Put the capers in a bowl and cover with water, let it soak for 10 minutes.
Arrange the slices of chicken breast between two sheets of plastic wrap and pound with a meat mallet to flatten them.
Season the chicken breasts on both sides with a pinch of salt then move the breasts nell'arrowroot shaking off the excess.
Heat the olive oil with coconut oil in a pan, add the chicken breasts and cook for 4-5 minutes on each side until they are well browned.
Add the lemon juice, water or beef broth, the water drained capers, lemon organic washed and cut into slices. Cook for a few minutes until the sauce will be restricted.
Arrange the chicken breasts on the plate with slices of lemon, sprinkle with the cooking sauce and chopped parsley.
Serve.
Tips: The chicken breast can be substituted with turkey breast or veal.
