Paleo Cookie Dough Bites

As a child, you also liked to lick the dough bowl while baking? Then I'm sure these chocolate covered Cookie Dough Bites with raspberry filling are just to your taste.

In terms of taste, they are reminiscent, as the name suggests, of raw cake dough. Filled with home-made jam a dream! Outside the season, I like to use frozen berries. Be creative: The Bites also taste with rosehip jelly, blueberry or another fruit pulp of your choice. Take what you have or what you like most.

Ingredient

1 handful of raspberries
1 teaspoon maple syrup
1/2 tsp locust bean gum
1 pinch of vanilla
Cookie Dough mass
100 g of cashew
75 g dried mulberries
35 g of coconut flour
2 teaspoon maple syrup
4-5 teaspoon lukewarm water
1 pinch of salt
50g dark chocolate

Preparation
1. Boil raspberries with a small dash of water in a saucepan on the stove. Coarsely crush larger pieces of berry using a fork.
2. Add maple syrup & vanilla.
3. Add locust bean gum to thickening and stir. It makes the whole thing "jam-laden". Optionally, it can be left out altogether or you use chia seeds.
4. Remove the pot from the heat and let the raspberry filling cool down.
5. For the cookie Dough cashews, mulberries, coconut flour, maple syrup & salt in the high-performance mixer give.
6.Add about 4, 5 tablespoons of water and mix. Start with less water and give more later if necessary. The dough should be mixed but not too fine. Small pieces & the crisp of the dried mulberries are wanted.
7. Briefly put the dough in the freezer to cool. Meanwhile, melt the chocolate over a water bath.
8.Form the chilled cookie dough into balls with your hands. Press in a small bowl per ball, add a little raspberry filling and carefully spread the dough over it with your fingers. Roll again & set aside.
9. Do the same with the rest of the dough. Then completely cover the finished balls with melted chocolate.
10. To solidify, cool for about 30 minutes.
