Paleo Stuffed Avocado


Ingredients

2 avocado (s)
some lemon juice
5 tomato (n), dried, pickled in oil
8 olives, pitted black,
2 tbsp plain yogurt
some parsley
salt and pepper
paprika

Preparation

The avocados in half, remove the seeds, loosen the flesh carefully from the shell and dice. Immediately sprinkle with lemon juice. Drain the tomatoes and cut into small pieces. The olives cut into strips. Mix tomatoes and olives with the avocado flesh.

Chop the parsley finely, mix with the yoghurt and season with salt, pepper and paprika. Mix the yoghurt with the avocado, tomatoes and olives. Fill the whole into the avocado halves and serve garnished with parsley.
